Gluten Free Riceflour Spaetzle

Ingredients
3/4 cup sweet rice flour
3/4 cup brown rice flour
3 eggs
approx. 1 teaspoon salt
1/2 cup water (or a little less)
In a large bowl combine flour, salt and eggs. Add water a little at a time to form a soft dough.
WORKING PROCESS
Boil 2 quarts of water with 1 teaspoon salt in a large pot (just the right size for the Spaetzle Maker) Place the Spaetzle/Dumpling Board on top of the cookpot over the simmering water. Pour one portion of the dough onto the board. Using the plastic scraper to press the dough back and forth through the board into the simmering water. Remove the board. When Spaetzle/Dumplings float to the top of the water (3 to 4 minutes) they are done. Remove the pasta with a slotted ladle and serve.
Repeat process until all the dough is used up.
WHAT CAN BE ADDED INTO THE DOUGH?
lemon pepper Children love Spaetzle with apple sauce.
garlic powder Leftovers taste great fried in butter or olive oil
basil, parsley Spaetzle/Dumplings can be added to soup
nutmeg You can freeze the pasta for later use.
1/2 cup smocked salmon
1/2 cup chopped bacon
